Corned Beef, yum!

You'll need a slow cooker for this one.

1.5kg piece of corned beef
2 T malt vinegar
1 1/2 T brown sugar
1 t peppercorns
1 bayleaf
1 small onion quartered skin and all
2 cloves

Wash your piece of meat thoroughly under cold water. Place everything into your slow cooker with enough water to cover. It will take 6 - 8 hours on low. Remove and let rest before carving. Place the left over piece back into the slow cooker to cool properly before removing and transferring to the fridge.

I normally serve this baked vegies and crisp greens. Guess what we are having tonight ;)

  1. This is almost exactly how I do silverside, except I don't normally measure or count anything, but all the ingredients are there :) What do they say about great minds? Makes my planned tuna salad seem a little boring tonight.
