Muesli Bar Recipe
125g butter
2 tablespoons golden syrup
2/3 C raw sugar
1 C rolled oats
1/3 C sesame seeds
1/2 C desiccated coconut
1/3 C sunflower kernels
2/3 C self raising flour
Preheat oven to 130C. Put butter, golden syrup and sugar into a bowl and melt, but do not let boil. Add all other ingredients and mix well. Use baking paper to line a large baking tray approx 20cm x 30cm. Spread mixture evenly over the base making sure to press down with hands. Bake in the oven approx 1 hour or until golden in colour. Leave to cool in tin, it will firm up as it cools. Turn out once cool and cut into even bars.
Variations we are going to try this week include choc chip & peanut also almond & currant. If they go to plan I will post those recipe's too :)
Have you tried adding the other ingredients without changing the proportions of the base ingredients? Just wondering if I added chopped dates, would this make it more unstable.
ReplyDeleteI haven't tried any soft fruits yet. I would think if you chopped them finely enough and didn't over do it it would work OK. Let me know if it turns out and i'll add Pam's recipe to the collection :-)
ReplyDeleteI added currants and that worked well (just reduced the sugar amount a little). I've got a batch in the oven at the moment with currants, cranberries and pepitas, (also sans sesame seeds because I don't have any at the moment) so I'll let you know how they turn out.
ReplyDeleteSounds yum! Did you knock the sugar back to 1/2 C? I am waiting for Mr Coles to arrive this arvo to restock the cupboard then i will be into some serious baking as we are all out of snacks.
ReplyDeleteKnocked the sugar back to 1/3C. With the extra fruit it's a bit more crumbly (and I only baked for half an hr). Might have to add a bit more golden syrup next time to compensate.
